Ingredients to make Butter Murukku

  • Rice flour – 2 Cups
  • Gram flour – 1 cup
  • cumin Seeds -1 tbsp.
  • Carom Seeds (Ajwain) – 1 tbsp.
  • chilli Powder – 1.5 tbsp.
  • turmeric Powder – ¼ spoon
  • asafoetida – ¼ spoon
  • salt – As per taste
  • butter – 2 tbsp.
  • oil – for frying
  • Hot water – To make stiff dough

How to make Butter Murukku

  1. Take a big mixing bowl and pour in measured quantities of Rice Flour and Gram Flour. Alternatively instead of using Gram Flour, we can use fried gram powder.
  2. Add in Cumin Seeds, Carom Seeds, Turmeric Powder, Asafoetida, Chilli Powder, Salt and mix well.
  3. Add in butter and mix it well so that the whole mixture resembles the Semolina texture without any lumps.
  4. Take a small quantity of this mixture and add in hot water, mix well and make a stiff dough.
  5. Load this dough into the Murukku Presser with the star shaped design plate at the bottom.
  6. Heat oil in a deep bottomed pan/kadai.
  7. While the oil is getting hot, grease some polythene sheets with few drops of oil and gently press the murukku presser. Start spreading the dough coming out in a circular shape to the desired size.
  8. Once the oil is hot, gently drop the prepared Murukku’s and fry until golden brown.
  9. Repeat this for the next set of Butter Murukkus.

My Tip:

You can replace Gram Flour with a fine powder of Fried Gram, for a different taste and soft texture.
