ABOUT Chawal ki Pinni RECIPE

Chawal ki pinni is a traditional punjabi sweet made during lohri.However this is a much simplified recipe which I learnt from my mom and definitely make it during winters.

Ingredients Serving: 10

  1. Rice flour- 500g
  2. Jaggery (gur)-300g
  3. Desi Ghee-300g
  4. Dry coconut (khopra)-1/2 cup
  5. almond-1/2 cup
  6. cashews-1/2 cup
  7. Dessicated coconut-1-1/2 cup
  8. Cardamom powder-1 tblsp
  9. water-1 cup

Instructions

  1. Cut the dry coconut into thin slices.
  2. Coarsely crush the almonds and cashews.
  3. Heat a kadhai and transfer rice flour in it.
  4. Now dry roast the flour in medium to low flame stirring continuously.This step will take 18-20 minutes.
  5. Dry roast the flour until the colour changes to light golden.Immediately transfer into another vessel.
  6. Slightly saute the dry fruits in 1 tablespoon ghee and add into the flour.
  7. Add water and cardamom powder to the jaggery and boil for 4-5 minutes.
  8. Strain the boiled jaggery through a seive and add in to the flour.
  9. Heat the ghee and add in to the flour.Mix everything well.
  10. Now make balls of your desired size.
  11. Coat with dessicated coconut and serve.
  12. These laddoos can also be stored for up to 1 month in an air tight container.
