ABOUT Pasta & Prawn Frittata RECIPE

A super quick and an easy winter snack to be enjoyed along with some garma garam chai.

Ingredients Serving: 2

  1. 3 eggs, well beaten
  2. 8-10 prawns, cleaned & deveined
  3. 1/2 cup pasta, boiled al dente
  4. 1 onion, chopped
  5. 1 tsp. ginger, chopped
  6. 1 tsp. garlic, chopped
  7. 1-2 green chilies, chopped
  8. 1-2 sprigs curry leaves
  9. 1/2 cup spinach, chopped
  10. 1 tbsp. fresh grated coconut
  11. 1 tsp. sesame seeds
  12. 1 tbsp. peanuts
  13. salt to taste
  14. 1/4 tsp. pepper powder
  15. 1-2 tbsp. mixed nuts, chopped
  16. 2 tbsp. oil
  17. 1 tbsp. coriander leaves, chopped

Instructions

  1. Dry roast coconut, sesame seeds and peanuts till light brown. After it cools down, grind and keep aside.
  2. Heat 1 tbsp. oil and saute the prawns till it changes colour. Drain and keep aside.
  3. In the same oil, stir fry the onion, ginger, garlic, green chilies & curry leaves till light brown. Drain and keep aside.
  4. Now add in all the remaining ingredients.....
  5. ......followed by the eggs (except oil and coriander leaves).
  6. Spread it evenly and cook, covered on a low flame till one side is done. Carefully flip it over and cook the other side too.
  7. Transfer to a serving plate & garnish with coriander leaves.Cut as desired & enjoy preferably with some ketchup, chutney, mayo or hummus.
