Ingredients Serving: 4

  1. Ghee 300 grams desi ghee
  2. 2 medium sized pieces of Ginger
  3. 2 cups wheat flour
  4. 2 cups coarsely grind wheat flour
  5. 4 cups jaggery
  6. 1 tsp Tea Masala
  7. 1 tbsp dhik (ghund)
  8. 1 tbsp mix dry fruits(finely chopped almonds,cashews,pistachios and kismis)
  9. Charoli 1 tablespoon (optional)


  1. First of all peel off ginger and grate it completely and then keep it aside.Heat the nonstick khadhai. Add ghee to it and let it melt totally. Now first of all fry all the dhik (ghund) completely till it becomes brown in color and set it aside.
  2. Now add wheat flour in this ghee. And start roasting it on medium to low and again low to medium flame on gas untill it becomes reddish in cover and aroma of roasting starts coming from it . Now add ginger paste to it and roast it for 2 minutes along with the wheat flour.Now add finely chopped dry fruits in it and mix it well.
  3. Now add tea masala to it and mix it well. Add fried dhik (ghund) in it. Now switch off the flame ,so that wheat flour gets little cool.After 2 minutes add finely chopped jaggery to it and keep on stiring with full speed continuously till jaggery melt completely in it . Reason to add jaggery after 2 min is if we add it in hot roast wheat flour.Our ginger pak will become hard.But if we add jaggery after 2 minutes then our Ginger pak will become smooth and soft texture wise.
  4. Now take 1 ghee grease thali and pour this thick batter on it .And with the help of vaati spread it all around the thali by tapping it. Then after sprinkle some dry fruits and charoli (optional) on it and press little so it stick with our pak.
  5. And let it rest for 20 minutes. Finally cut it with knife or cutter and enjoy this healthy ,tasty and mouthwatering winter special dish with your friends and family.
