ABOUT Nolen gurer payesh RECIPE

This is a traditional winter dessert of West Bengal. Now-a-days so much palm jaggery are available in market. So this type of dessert can be made by using rice and palm jaggery.

Ingredients Serving: 5

  1. Basmati rice- 1/2 cup
  2. Palm Jagger-1/2 cup
  3. Salt- 1/4 tsp to adjust the sweetness
  4. Ghee- 2 tsp
  5. Milk-1 liter
  6. Cashew nuts-10-12
  7. Raisins-10-12
  8. Chopped almond and pistachios -2 tsp
  9. Cardamom powder- 1/4 tsp
  10. Water-2 cup

Instructions

  1. Wash and rinse the rice. Heat a pressure cooker and put ghee in it and roast all the cashew nuts and raisins and keep them aside.
  2. Then add water in the pressure cooker and put the rice with salt in it and allow it to cook till 4-5 whistle in low flame.
  3. Then switch off the flame and add the milk in it and allow it cook till it becomes thick and then add grated jaggery in it and mix it well.
  4. Allow it to become a little thick and mix the roasted cashew nuts, raisins and cardamom powder and mix it well.
  5. Switch off the flame and now your Nolan gurer payesh is ready.
  6. Serve hot, warm or cold by garnishing with some chopped almonds and pistachios.
