About Veg cabbage roll in green gravy Recipe

This delicious mouthwatering recipe is a winter special recipe,because in winter season fresh grown cabbages,carrots,spinach,spring onions are available in the market, we can make this recipe in off season but it doesn't taste so good because of freshness of cabages, spinach, carrots and spring onions, fresh vegetables always have more nutritional value than cold stored veggies.I made in this process to follow the popular Chinese cabbage roll, but it's stuffed with chicken or mutton, but I prepared the dish on my own choices with fresh Veggies stuff and along with green gravy.

Ingredients to make Veg cabbage roll in green gravy

  • For outer cover :
  • cabbage separated leaves 6
  • For making green gravy ingredients :
  • spinach leaves 1 bundle
  • coriander leaves 1 bundle
  • Chopped onion 1 tea cup
  • garlic cloves 10-12
  • green chillies 5-6
  • Fresh cream 2 tablespoon
  • Liquid milk 1/2 tea cup
  • salt according to taste
  • sugar 1 1/2 teaspoon
  • lime juice 4 teaspoon
  • Soft butter 1 tablespoon
  • For making fillings/ stuffing ingredients :
  • Chopped green capsicum 1/2 cup
  • Chopped spring onion 1/2 cup
  • Chopped carrot 1/2 cup
  • Chopped coriander leaves 1/2 cup
  • Mashed paneer 150 grams
  • Boiled mashed potatoes 1 medium size
  • Chopped cashew nuts 2 tablespoon
  • Chopped green grapes 4 tablespoon
  • Chopped cherries 4 tablespoon
  • Chopped green chillies 2 teaspoon
  • Black pepper powder 1 tablespoon
  • Hung curd 2 tablespoon
  • salt according to taste
  • Soft butter 1 teaspoon
  • nutmeg +mace powder 1 teaspoon
  • Extra ingredients :
  • Melted butter 1 teaspoon(for brushing the rolls)
  • Sunflower oil 1 teaspoon
  • vinegar 1 teaspoon

How to make Veg cabbage roll in green gravy

  1. Heat water in a pan with salt and vinegar
  2. Then soak the separated cabbage leaves into the water and boil in a medium flame for 10- 15 minutes for soften the leaves.
  3. In an another pan blunch the spinach leaves with some salt and vinegar for 3-5 minutes.
  4. After blunching, drain the water and wash it in a cold running water and place it in a plate.
  5. Now prepare the green gravy : heat sunflower oil in a frying pan. Then slightly saute the chopped onion, green chillies and garlic cloves into the pan.
  6. Then add blanched spinach, corriander leaves and cashew nut, then saute for few minutes.
  7. Then add salt - sugar and mix them properly and rest it for few minutes for cooling down.
  8. After cooling the mixed preparation add the lime juice and make a green smooth paste in a mixer.
  9. After that, put a pan on the gas oven, slightly heat the butter then add the green paste into this and saute for 1 minute.
  10. Then add the liquid milk and fresh cream, mix it well. And boil the gravy until its turns semi consistency or semi thickness.
  11. Now drain all the water of soaked softy cabbage leaves, with a help of a clean clothes dry the excess water into the leaves.
  12. Now prepare the stuffing or filling, gather all the chopped ingredients in a plate along with mashed boiled potatoes and paneer.
  13. Then add, rest of the stuffing ingredients, mix all properly.
  14. Now mix the soft butter into the stuffing mixture
  15. Now the stuffings are fully ready for filling the rolls.
  16. Now make the rolls one by one... Take 1 soft cabbage leaf and put small quantity of ready stuff in the middle part.
  17. First fold the lower part then the two sides part of the cabbage leaf.
  18. Then fold the upper part. In this same way make all the rolls.
  19. Then brush the rolls with melted butter.
  20. Then in a medium- low flame, steam the veg rolls for 20-25 minutes.
  21. After 25 minutes, again heat the green gravy in a low flame then set all the steamed veg cabbage roll into this green gravy.
  22. Put a lid on the pan and cook for 5 minutes in a low flame.
  23. Then serve hot, with your favourite dish like any type of rice dishes or, roti /chapatis or, nun /paratha.

You can try this recipe with non veg ingredients.
