ABOUT Hyderabadi Dum Ka Keema RECIPE

This winter special is very much relished at my place with some simple homemade paratha and accompanied with onion and a dash of lime.

Ingredients Serving: 4

  1. 2 cups mutton keema / mince
  2. 2 tbsp. fried onion
  3. 2 tbsp. roasted chickpea flour
  4. salt to taste
  5. 1 tsp. ginger-garlic paste
  6. 1/2 cup coriander & mint leaves, chopped
  7. 1 tbsp. coriander-cumin powder
  8. 1 tsp. red chili powder
  9. 1-2 green chilies, chopped
  10. 1/4 tsp. pepper powder
  11. 1 tbsp. raw papaya, grated / paste
  12. 1/2 cup yoghurt
  13. 3 tbsp. oil
  14. 1 medium size live charcoal + 1 tsp. oil
  15. Garnishing -
  16. 1 tsp. coriander leaves, chopped
  17. 1 tsp. fried onion
  18. lime wedges
  19. sliced onion

Instructions

  1. In a bowl, combine all the above mentioned ingredients (except oil) and marinate overnight or for a minimum of three hours.
  2. Heat oil in a pan. Add the marinated mutton & stir fry for 2-3 minutes on medium flame. Then cover & simmer on a low flame till it is cooked. Stir 1-2 times at intervals.
  3. When done, switch off the flame & place a small steel bowl in the centre. Put a live charcoal and pour a tsp. of oil over it.
  4. Immediately cover with a lid for 4-5 minutes. Then remove the lid & transfer the cooked keema to a serving plate.
  5. Garnish with coriander leaves, fried onion, sliced onion & lime wedges. Enjoy as a side dish with naan, kulcha, tandoori roti, roti, paratha or any flavoured rice.
