ABOUT Maqlouba RECIPE

A Palestinian tradition,maqlouba means 'upside down' in Arabic and is a pot of stewed meat, rice, and fried vegetables,cooked and flipped into a serving dish to form an impressive tower. I tried vegetable maqlouba this time.

Ingredients Serving: 4

  1. Italian eggplant 1( big)
  2. Potatoes 2
  3. Capsicum 1
  4. Onion 2
  5. tomatoes 2
  6. Ginger garlic paste 1teaspoon
  7. Cinnamon 1 big piece
  8. Cardamom 6
  9. Clove 5
  10. Cinnamon powder 1/2 teaspoon
  11. Cardamom powder 1/2 teaspoon
  12. Clove powder 1/4 teaspoon
  13. Salt
  14. Chilli Powder 1/2 teaspoon
  15. Turmeric powder 1/2teaspoon
  16. Basmati rice 2cups

Instructions

  1. 1. Cut the vegetables into round
  2. 2. Soak the rice for 30 minutes
  3. 3. Deep fry the vegetables
  4. 4. Cook the rice with salt
  5. 5.Heat a pan with 1tbsp oil
  6. 6. Add whole spices and masala powders( half portion)
  7. 7. Pour 4 tbsp water
  8. 8. Add cooked rice and mix
  9. 9. Take another pan with 1tbsp oil
  10. 10. Add whole spices and masala powders
  11. 11. Pour 1/4 cup water
  12. 12. Boil for 1 minute
  13. 13 . Take a vessel
  14. 14 .Arrange fried vegetables
  15. 15. Pour the masala mix over the vegetables
  16. 16.Layer the rice over the vegetables
  17. 17. Dum for 15 to 20 minutes
