ABOUT (Better) Butter celebration platter RECIPE

A quick, simple mock ice cream made using Almond butter, bananas and chocolate chips, when teamed up with other equally delicious elements, makes for an elegant party dessert. This sinful dessert celebrates the goodness of Butter perfectly befitting the Better Butter anniversary celebrations! The different elements are quick and simple to make but when assembled together, the dessert looks like you have slogged over it in the kitchen! You can also use peanut butter instead of Almond butter. Also if you do not find butterscotch chips, use butterscotch cookies for the crumb instead of butter cookies+chips. Don’t be put off by the humble looking Almond butter-banana ‘ice cream’. It tastes absolutely delicious on its own too. The salted rum butter glaze enhances the taste but if you prefer you can use unsalted butter.You may also use pineapple instead of star fruit.Skip the rum if serving this to kids.

Ingredients Serving: 2

  1. For the Almond butter ,Banana,Chocolate chip ‘ice cream’
  2. 3-4 tablespoon Almond butter
  3. 1 Banana, sliced and frozen overnight
  4. 1 teaspoon honey
  5. Few drops Vanilla extract
  6. 1 tablespoon chocolate chips
  7. For the butterscotch crumb
  8. 2 butter cookies
  9. 1 tablespoon butterscotch chips
  10. For the Chocolate butter sauce
  11. 4-5 tablespoon fresh cream
  12. 2 tablespoon butter
  13. 2-3 tablespoon grated dark chocolate (quantity may change depending on the chocolate quality)
  14. 2-3 teaspoon sugar
  15. For the salted Rum butter glazed Star fruit
  16. 2 tablespoon butter (salted)
  17. 1 tablespoon brown sugar
  18. 2 tablespoon rum
  19. 1 small Star fruit sliced
  20. Pomegranate seeds and butterscotch chips (optional) for garnish

Instructions

  1. For the Almond butter ,Banana,Chocolate chip ‘ice cream’
  2. Blend the frozen banana in a grinder or food processor.
  3. Add the Almond butter and whip again.
  4. Add the honey ,vanilla ,chocolate chips and mix.
  5. Freeze in an airtight container for 1-2 hours
  6. For the butterscotch crumb: Blend together the cookies with the chips to a fine powder.
  7. For the Chocolate butter sauce
  8. Warm the butter and cream in a small pan.
  9. Add the sugar and stir till the sugar melts.
  10. Take off the heat,add the chocolate, wait for few seconds and stir till the chocolate melts. Warm again, if required till the chocolate melts.
  11. Stir and keep covered till required
  12. For the salted Rum butter glazed Star fruit
  13. Heat butter in a small non-stick pan.
  14. Add the sugar and stir till it melts.
  15. Add the Star fruit and stir to coat it with the butter-sugar mixture.
  16. Add the rum, stir and cook for few seconds and take it off the heat
  17. To serve
  18. Place a generous spoon of the Butter chocolate sauce on a serving dish.
  19. Place a quenelle (use large spoons) of the Almond butter,Banana, chocolate chip ice cream over it
  20. Spread the butterscotch crumb around it.
  21. Drizzle the butter-rum glaze over it and serve with the sliced star fruits, pomegranate seeds and butterscotch chips
