ABOUT Chanar Paturi (Paneer cooked in Banana Leaf - Bengali Style) RECIPE

My most favoured winter delicacy that I enjoy for my weekend lunch with family is Paneer paturi, besides fish paturi. Paturi is a traditional method of steam cooking in a banana leaf. It is an extremely easy, simple and an unique recipe that is so yummy and goes well with hot steamed rice.A drizzle of some extra mustard oil to the end product enhances the flavour of the dish.

Ingredients Serving: 5

  1. 200 gms. paneer, mashed
  2. 1/2 cup fresh grated coconut
  3. 2 tbsp. mustard
  4. 2 green chilies
  5. 10-12 cashew nuts / 2-3 tbsp. poppy seeds
  6. 2 tbsp. yoghurt, well beaten
  7. 1/2 tsp. turmeric powder
  8. salt to taste
  9. 2-3 tbsp. coriander leaves, chopped
  10. 3 tbsp. mustard oil
  11. few extra fresh green / red chilies
  12. few banana leaves as required

Instructions

  1. Grind the cashew nuts, mustard seeds, green chilies & coconut to a smooth paste. Mix along with yoghurt, salt, turmeric powder, 2 tbsp. mustard oil, coriander leaves and paneer.
  2. Heat a tawa / pan & place the banana leaves on them for a few seconds on both sides. This will help it to become more pliable so that it can be easily folded without breaking.
  3. Place some of the paneer mix in the centre along with a chili & fold them.
  4. Tie with a string & keep aside.
  5. Do the same with rest of the paneer mix.
  6. Heat the remaining oil in a pan & gently place all the folded banana leaf parcels. Cover and cook for 4-5 minutes.
  7. Carefully flip them over & cook the other side too till done.
  8. Enjoy with hot steamed rice.
