ABOUT Fenugreek lacchha paratha RECIPE

It is a North Indian recipe. During winter all the fresh vegetables are available in the market,Fenugreek is one of those type. For making this Fenugreek lacchha paranthas I used little amount of oil/ghee making the parathas a healthy one for eating.

Ingredients Serving: 3

  1. Making dough ingredients :
  2. Flour 2 1/2 cup
  3. Chopped fresh fenugreek leaves 1 cup
  4. Salt according to taste
  5. Sugar 1 teaspoon
  6. Carom seeds 1 teaspoon
  7. Kalonji 1 teaspoon
  8. White oil 3 teaspoon
  9. Water as required
  10. paratha rolling ingredients :
  11. Ghee 2 teaspoon
  12. Flour 2teaspoon
  13. Frying paratha ingredients :
  14. White oil /ghee 1/4 cup

Instructions

  1. Mix salt,2teaspoon of oil and sugar into the flour.
  2. Then add, chopped and fresh fenugreek leaves, carom seeds and kalonji with this and mix it properly
  3. After that use some water gradually and make a soft dough.
  4. Grease the dough with 1 teaspoon of oil then put a lid on the bowl and rest for 15 minutes.
  5. After 15 minutes, make equal medium size of ball of this dough.
  6. Using some dry flour roll down the balls into a large size like roti or chapatis, then brush the little amount of ghee and sprinkle some flour on the chapatis.
  7. Then starting to fold the chapatis in a fanning fold method (like paper fan fold)
  8. After that press the two sides, carefully and gently hold the two corners and beat repeatedly or 2-3 times, the fanning fold portion on a flat area for extending the portion .
  9. Then start to roll the fanning fold portion from 1 side to another corner. And press well the other side.
  10. In this process make all the rolls and slightly flattened by using your plam.
  11. After that, roll down the laccha paratha in a medium size paratha.
  12. Then heat a tawa on the gas, then toast all the paratha from Both side very well.
  13. Then heat some little quantity of oil on tawa and fry all the fenugreek lacchha paratha one by one.
  14. Then serve hot with curd raita.
