ABOUT DAIKON AND CARROT SALAD with Homemade Dressing RECIPE

Daikon and Carrot Salad is a refreshing, cleansing salad with fresh winter vegetables like carrots and radish/daikon/mooli in a tangy, mildly sweet, chatpata dressing with honey and lime!

Ingredients Serving: 2

  1. 1 large radish/daikon
  2. 1 large carrot
  3. 1/4 cup peanuts/groundnuts, coarsely crushed
  4. 2 tablespoons raisins
  5. Few mint and coriander leaves
  6. 2 teaspoon roasted white sesame seeds
  7. FOR THE DRESSING:
  8. Juice of one large lemon/lime
  9. 3 tablespoons salad oil (any odourless oil or even olive oil)
  10. 1/2 teaspoon chaat masala powder
  11. 1 teaspoon honey
  12. Salt if needed

Instructions

  1. Wash, peel and cut daikon and radish into long juiliennes. You can even chop them into any size you prefer.
  2. TO MAKE THE DRESSING: In a small tight-lidded bottle, add all the dressing ingredients, close with the lid and shake well for a few seconds. Taste and adjust seasonings according to personal preference.
  3. Crush peanuts in a mortar pestle to a coarse mixture.
  4. Gather all the ingredients for the salad.
  5. Transfer all of the dry ingredients into a large bowl.
  6. Add the salad dressing and mix gently with two ladles or better yet with clean hands to mix the dressing thoroughly. Garnish with more peanuts and serve chilled.
  7. Enjoy refreshing Daikon and Carrot salad with fresh homemade tangy, chatpata, mildly sweet salad dressing. Who says that salads cannot be enjoyed in winters!
