Carrot cake bliss balls

Ingredients to make Carrot cake bliss balls

  • carrot - 1 big
  • Dried dates - 7-8
  • Finely chopped dried pineapple - 1/4 cup
  • Rolled oats - 1 cup
  • almond butter or peanut butter - 1 tbsp (optional)
  • nutmeg powder - 1/4 tsp
  • cinnamon powder - 1/2 tsp
  • Desiccated coconut - 1/2 cup

How to make Carrot cake bliss balls

  1. Peeled the carrot and grate.
  2. Dry roast the rolled oats in medium flame.
  3. Wait to cool down completely.
  4. Chopped the dates into small pieces.
  5. Put grated carrot, dates, chopped pineapple, roasted oats, almond butter, cinnamon powder and nutmeg in a food processor.
  6. Process them until almost smooth and combined well together.
  7. Roll the mixture into small or desire sized balls.
  8. Roll in desiccated coconut to coat nicely.
  9. Place in the fridge for 1 hour to set properly.
  10. Whenever you wish just take out from the fridge and enjoy the good taste.

My Tip:

If you store in an airtight container in the fridge it will stay fresh for upto 1 week.
