This is my own recipe. Healthy Butter cake using whole wheat flour and Palm-Jaggery.

Ingredients Serving: 10

  1. Butter - 1/2 cup
  2. Wheat Flour - 1 Cup
  3. Cardamom powder - 1/2 tsp
  4. Baking powder - 1 1/4 tsp
  5. Baking Soda - 1/2 tsp
  6. Sea Salt - 1/8 tsp
  7. Palm Jaggery / Karuppatti - 1 Cup
  8. Water - 2 tbsp
  9. Eggs - 2
  10. Thick Curd - 1/4 cup
  11. Milk - 1/4 cup

Instructions

  1. Take an 8-inch square or round cake pan and dust with some flour or line a butter paper , grease with some coconut oil or ghee and set aside.
  2. Pre-heat the oven to 350°F/176°C for 10 minutes or your oven required temperature.
  3. Add all dry ingredients of wheat flour,cardamom powder,baking soda,baking powder and salt in a bowl. Stir well and keep it aside.
  4. Measure 1 Cup of Palm Jaggery or Karuppati in a bowl along with 2 tbsp of water and heat it until it dissolves.
  5. Once it dissolved completed, filter it using a sieve to remove impurities or any dirt from palm jaggery and set aside
  6. Take a mixing bowl , add 1/2 cup of butter and beat for about 5 minutes or until it turns to pale and fluffy.
  7. Then add eggs into it and beat well.
  8. Then add curd,milk and palm jaggery filtered syrup into that and mix well until all combined well.
  9. Now add wheat flour mixture little by little and stir well.
  10. Pour the mixture into the cake pan.
  11. Bake it for about 30 to 35 minutes or until the center of the cake comes out clean when you inserted the toothpick or skewer.
  12. Healthy Palm-Jaggery Butter Cake is Ready and Enjoy.
