Ingredients Serving: 6

  1. SPICE BLEND
  2. Black pepper corns 2 tsp
  3. Whole coriander seeds 1.5 tsp
  4. Cumin seeds 1 tsp
  5. Cloves 2 whole
  6. Bay leaves 2
  7. Paprika 2 tsp
  8. Chilli pwdr 1/2 tsp
  9. Kosher salt 3 tsp
  10. Amchur pwdr 1 tsp
  11. OTHER INGRIDENTS
  12. Red onion 1 roughly chopped
  13. Cilantro 2 cups roughly chopped
  14. Garlic cloves 4 chopped
  15. Ginger 1.5 tsp
  16. Green chillies 4 to 5
  17. Sugar 1.5 tsp
  18. Mutton/Beef mince 1 kg
  19. Serving
  20. Sliced onions 1
  21. Mint leaves few

Instructions

  1. Toast the pepper corns,coriander,cumin and cloves
  2. Transfer to a blender , add bay leaves and grind to a fine pwdr
  3. Add paprika, red chillies pwdr,salt, anchor pwdr,onion,cilantro,ginger,garlic,chillies,sugar to it.
  4. Blend and form a fine paste
  5. Transfer this mixture to a muslin cloth and squeeze out excess water
  6. Take the mince and add the blend and rub with ur hands until completely homegeneous
  7. Marinate and keep for up to 24 hrs
  8. Divide the mixture into 12 equal parts
  9. Roll the mince over wooden/metal skewers and form equal kababs
  10. Grill them on charcoal, brushing generously with ghee/oil
