Tricolour Vanilla cupcake with surprise gulab jamun

Ingredients Serving: 6

  1. 200 gms All purpose Flour
  2. 200 gms castor sugar
  3. 4 Eggs
  4. 2 tsp vanilla essence
  5. 100 gms butter
  6. 1 1/2 tsp baking powder
  7. 12 medium size gulab jamuns
  8. For frosting: 200 ml whipping cream
  9. 2 drops of each green and saffron food colour
  10. Sugar balls for decoration

Instructions

  1. Preheat oven at 180 degree centigrade for 10-15 minutes.
  2. In a big glass bowl cream butter and sugar using an electric hand beater.
  3. Add eggs one at a time and beat for 20 seconds after each addition.
  4. Add vanilla and beat for 20 seconds.
  5. Blend flour, baking powder and sieve 2-3 times.
  6. Add to the egg butter mixture and beat on a low speed until well mixed.
  7. Now pour the batter into a piping.
  8. Pipe 1/4 of cupcake mould with cake batter, place one gulab jamun and fill the mould with the cake better until the gulab jamun gets covered. Repeat for all 12.
  9. Bake at preheated oven for 25-30 minutes.
  10. Cool down the cupcakes to room temperature.
  11. Whip the cream in 3 portions until soft peaks, add colour in two portions and whip again until stiff peaks.
  12. Fill the piping bag one side with saffron colour, centre with white and the other side with green and pipe on the cupcakes.
  13. Finish with sugar balls.
