Mushrooms caramelized in butter stuffed with caramelized onions, placed on a bed of spiral pasta in Arrabiata Sauce, dressed with herbed white sauce. A unique blend of the two sauces with Buttery Mushrooms.A juicy meal preparation.

Ingredients Serving: 2

  1. 8 pieces of Mushrooms, big size
  2. 1 big Onion
  3. 75 grams Butter
  4. 2 medium Tomatoes
  5. 2 tbsp Tomato ketchup
  6. 200 gms Spiral pasta
  7. Salt to taste
  8. 1/2 tsp Sugar
  9. 1 1/2 cup Milk
  10. 1 tbsp Oregano
  11. 1 tsp Black pepper powder
  12. Corriander leaves to garnish
  13. Wakefield white sauce ready mix
  14. 1 tsp Red chilli powder
  15. 1 tbsp crushed Garlic

Instructions

  1. Wash, clean and remove the stems of mushrooms by making them hollow.
  2. Chop the onion finely, grate or puree the tomatoes and keep aside.
  3. Boil the spiral pasta in sufficient water for 10 minutes on a simmering flame.
  4. Run under cold water, strain and keep aside.
  5. Heat butter in a pan and sprinkle 1/2 tsp sugar.
  6. Saute the mushrooms lightly on both sides in the butter till caramelised. Keep aside in a plate.
  7. Saute and caramelise the finely chopped onions. Fill these in the mushrooms.
  8. In the same pan add 1/2 tsp of butter to saute the tomato puree, add crushed garlic and oregano. Add salt and red chilli powder, mix well.
  9. Stir in some tomato ketchup add this to the boiled spiral pasta.
  10. Transfer in a bowl, place the mushrooms on the pasta as per preference.
  11. Heat 1 tsp butter in a pan.
  12. Mix the oregano and milk with the ready white sauce powder, mix well.
  13. Add this to the melted butter in the pan. Stir for 2-5 minutes to avoid any lumps.
  14. Cool this white sauce a little pour over the mushroom and pasta.
  15. Garnish with corriander and sprinkle pepper
