Quesadillas is definitely a complete meal depending upon how you prepare your filling. My today's Quesadillas is a fabulous protein rich, calcium rich dish to pack in anyone's lunchbox. Kids will enjoy thoroughly this black bean loaded quesadillas. Black beans will take care of the protein part and cheese occupy the calcium part, obviously this quesadillas can satisfy easily some hungry tummies.

Ingredients Serving: 5

  1. 2cups Blackbeans (cooked)
  2. 1cup Potatoes (cubed as small pieces)
  3. 1 Onion (chopped)
  4. 1 Cup Cheddar cheese (grated)
  5. 1/2tsp Cumin seed powder
  6. Salt
  7. 1/2tsp Pepper powder
  8. Olive oil
  9. 5 Corn tortillas (store bought)

Instructions

  1. Heat oil, saute the onions until they turns transculent,
  2. Add the cubed potatoes and cooked black beans,sprinkle some water and cook everything in high flame for few minutes.
  3. Now add the pepper powder,cumin seed powder,salt and cook for few seconds and put off the stove..
  4. Heat a pan in simmer,drop a flour tortillas to the hot pan, gently drop enough cooked black beans -potato filling topped with cheese.
  5. Fold the tortilla and press it with a spatula and cook for few seconds.
  6. Flip the tortillas to toast the other side.
  7. Once the quesadillas get well toasted, transfer to a plate and cut as a 2 wedges.
