ABOUT Apple Jalebi( Apple Fritters Soaked in Sugar Syrup) RECIPE

Apple Jalebis are batter-coated apple rings fried in ghee till crisp and coated with fragrant saffron-flavoured sugar syrup. Apple Jalebi are yum, crispy and delicious. They can be deep orange or yellow in color and are enjoyed best when they are hot.

Ingredients Serving: 8

  1. For the batter :
  2. 1/2 cup all purpose flour or maida
  3. 1/4 tsp yeast
  4. 1/2 tsp sugar
  5. 1/4 tsp cardamon powder
  6. Ghee to fry
  7. For the Sugar Syrup:
  8. 1 cup sugar
  9. 1 Cup water
  10. 1-2 drops of kewra essence
  11. 1/2 tsp edible red food color
  12. 1/4 tsp Cardamom Powder
  13. 2-3 drops of saffron flavor
  14. 1-2 drops of lemon juice

Instructions

  1. Take the yeast , half a teaspoon of sugar and half a teaspoon of flour in bowl. Add about 1 tablespoon lukewarm into it and let it sit for about 10 minutes in a warm place. When the bubbles appear, the yeast is ready.
  2. Combine flour, yeast mixture , cardamom powder in a medium size mixing bowl. Add just enough water to form a smooth and thick batter.Let it rest for half an hour.
  3. Meanwhile prepare the sugar syrup. Combine sugar and water in a saucepan and bring it to a boil. Add cardamom powder and food color. Let the sugar syrup simmer till you get half a string thread consistency.
  4. When the sugar syrup reaches the right consistency, add a drop or two of lemon juice to prevent the sugar from crystallizing again. Turn off the heat. Add kewra essence and saffron flavor. Keep it aside.
  5. Core and peel the apple. Cut it into thin round slices. Keep it aside.
  6. Heat ghee in a deep heavy bottomed pan to fry. The temperature of the oil should be such that a drop of batter when dropped into the oil comes up at once.
  7. When the oil is hot, dip the apple slices one at a time, into the batter and gently slide it into the hot pan. Take care that the pan is not overcrowded. There should be atleast 1 inch gap between the battered apple slices.
  8. Deep fry the apple jalebis on medium heat till it turns crispy and golden brown on both the sides. Take out the jalebis on a plate and drain out the excess oil by resting them on a kitchen paper towel for 1-2 minutes.
  9. Transfer the apple jalebis into warm sugar syrup. Let it soak in the syrup for 2 minutes so that it is coated well on all sides. Take it out on a plate. Garnish it with thinly sliced pistachios or walnuts or almonds.
  10. Serve the apple jalebis hot.
