Moist banana cupcakes with chocolicious frosting

Ingredients Serving: 6

  1. Flour - 1 cup
  2. White sugar - 1 cup
  3. Cocoa powder - 1/3 rd cup
  4. Baking powder - 3/4 th tsp
  5. Baking soda - 3/4 th tsp
  6. Salt - 1/4 th tsp
  7. Egg - 1
  8. Mashed banana - 1/2 cup
  9. Warm water - 1/2 cup
  10. Oil - 1/4 th cup
  11. Milk - 1/4 th cup
  12. Vanilla extract - 3/4 th tsp
  13. Fudge frosting :
  14. Dark chocolate - 90 gm
  15. Butter - 1/2 cup
  16. Icing sugar - 1 cup
  17. Vanilla extract - 1 tsp

Instructions

  1. Sieve all the dry ingredients and keep aside. Mix sugar as well to this.
  2. In another bowl, whisk the egg, mashed banana , water , milk, oil and vanilla extract.
  3. Fold in the dry ingredients to the wet mixture.
  4. Fill 3/4 of every muffin liner in the muffin tray and bake at 180 degree centigrade in a preheated oven for 20 minutes.
  5. Melt the chocolate using a double boiler or microwave. Let it cool for a while.
  6. Whisk the butter, icing sugar and vanilla extract till fluffy.
  7. Add the melted cool chocolate into the icing and whisk for 2-3 minutes.
  8. Pipe the cupcakes with frosting.
