ABOUT Double Chocolate Muffins RECIPE

This recipe makes the most decadent chocolate loaded muffins, enjoyed both by kids and adults. Quick to make and best when eaten warm fresh from the oven.

Ingredients Serving: 6

  1. Dry ingredients:
  2. 2 cups self raising flour
  3. 3/4 cup cocoa powder (Hershey's)
  4. 1-1/4 cup sugar
  5. 1/2 tsp Salt
  6. 1/2 to 3/4 cup chocolate morsels (72%)
  7. Wet ingredients:
  8. 2 Eggs
  9. 1/4 cup unflavored oil
  10. 1/4 cup melted and cooled unsalted butter
  11. 3/4 cup yogurt whipped smooth
  12. 3/4 cup Milk
  13. 1 tsp vanilla extract
  14. 2 tsp instant coffee granules

Instructions

  1. Preheat oven to 400 deg F (200 deg C).
  2. Combine all the dry ingredients except chocolate morsels together making sure there are no lumps seen.
  3. Pulse all the wet ingredients together till smooth.
  4. Pour the wet blend in the flour and fold till mixture looks homogeneous. Fold in one direction only (not vigorously) and avoid over-mixing the batter. The batter should look lumpy.
  5. Spoon the batter in cupcake liners or nonstick muffin pan. Fill up to 3/4 of the cupliner. Arrange the chocolate morsels on top of the batter (or alternatively mix them in the batter).
  6. Bake for 15-20 minutes or till toothpick when inserted in the muffin comes out clean. Remove from oven and leave it cool for 5 minutes and then transfer to wire rack to cool completely.
