Ingredients Serving: 10

  1. 340g Cake flour sifted
  2. 5 egg whites
  3. 1 teaspoon salt
  4. 170g soft unsalted butter
  5. 300 ml buttermilk
  6. 340g granulated sugar
  7. 1 tbsp Sprig vanilla extract
  8. 1 tbsp baking powder
  9. 120ml oil
  10. 1/2 teaspoon baking soda


  1. All the ingredients mentioned in the recipe should be at room temperature. Incase you do not have cake flour. For every 1 cup flour, remove 2 tbsp and add 2 tbsp corn starch. Sieve the mix twice. This is cake flour , store in air tight container
  2. Preheat oven to 170 , line two 8 inch cake pans
  3. In a bowl, mix flour baking powder, baking soda, salt and sugar
  4. Divide buttermilk into 2 parts. In one, add oil and whisk well. Whisk remaining buttermilk with egg whites, vanilla extract and keep it aside
  5. Add soft butter to flour mix and blend until mixture resembles coarse sand
  6. Now add buttermilk oil mixture and blend well for 3 minutes
  7. Now gradually add egg whites mixture and blend well.Divide batter equally and pour into prepared pans
  8. Bake for 25-35 minutes until done.Cool for 20 minutes. Demould and cool both the cakes completely
  9. Now do whipped cream or Cream cheese frosting as desired. Cool the cake
  10. Slice and serve this velvety soft delicious cake
