ABOUT Sattu Ka Paratha RECIPE

I have never been to Bihar, but I have a huge gang of Bihari friends. One of my Bihari friends actually introduced me to this very delicious traditional Bihari dish named, Sattu Paratha. Since then, I have been preparing this dish often and I just love it. Sattu is nothing but fried chickpea flour and Paratha is Indian flat bread. This is prepared by stuffing sattu mixed with spices in whole wheat flour paratha and fried on Tawa (flat pan). This is healthy and wholesome and a perfect choice for a comfortable breakfast.

Ingredients Serving: 3

  1. For The Stuffing:
  2. Sattu 1 cup
  3. Onion 1/2 no. (finely chopped)
  4. Green chilli 2 nos. (finely chopped)
  5. Garlic cloves 5 nos. (minced)
  6. Grated ginger 1 teaspoon
  7. Salt 1/2 teaspoon
  8. Pickle oil 1 teaspoon (any pickle)
  9. For The Dough:
  10. Whole wheat flour 2 cup
  11. Cumin seeds 1/2 teaspoon
  12. Salt 1/2 teaspoon
  13. Ghee 1 tablespoon
  14. Warm water (as needed to knead a smooth dough)
  15. For Frying Paratha:
  16. Ghee (as required for frying)

Instructions

  1. Properly mix all the ingredients mentioned in "For The Stuffing" section and keep aside.
  2. Mix all the ingredients mentioned in "For The Dough" section and knead a smooth dough.
  3. Cut out rather big balls from the dough and roll out to make small parathas. Stuff them with the dry stuffing.
  4. Enfold the fillings and make flat balls.
  5. Sprinkle flour and roll them out again to make parathas. The rolling need to be done very carefully as the dry stuffing can break the paratha if you press too hard.
  6. Heat a tawa and cook both the sides of the parathas. Rub little ghee on both the sides and fry till they turn light golden brown.
  7. Your fluffy and yummy Sattu Paratha is ready to be served now.
