ABOUT Peri Peri N Cheese Wheat Loaf RECIPE

Who says that whole wheat breads are heavy and dense, heres my 100% whole wheat bread, which is soft and spongy. I added buttermilk in place of milk and it turned out amazing. I flavoured this bread with peri peri and cheese, you can experiment with any of your favourite masalas.

Ingredients Serving: 5

  1. For Dough:
  2. 300 grams whole wheat flour
  3. 8 grams instant active dry yeast
  4. 2 teaspoon salt
  5. 5 tablespoons milk powder
  6. 1 cup buttermilk
  7. 2 tablespoons honey
  8. 2 tablespoons melted butter
  9. 2 teaspoons baking powder
  10. 1 tablespoon oil
  11. 1 tablespoon water
  12. For milk wash
  13. 1 tablespoon melted butter
  14. 1 tablespoon Milk
  15. For Filling
  16. 75 grams processed cheese
  17. 2 tablespoons peri peri powder
  18. 2 tablespoons chopped Coriander Leaves

Instructions

  1. Combine wheat flour, yeast, salt, and milk powder in a large mixing bowl.
  2. In a separate bowl mix buttermilk, melted butter and honey.
  3. In a small cup mix baking powder, oil and water
  4. Add all wet ingredients only when they are at room temperature. Add buttermilk mixture and baking powder mixture to flour and knead a soft dough.
  5. Add extra water or milk only if required.
  6. Take the dough onto slightly floured working counter and knead till the dough stops sticking to your hands, approximately for 5-10 minutes
  7. Dough is ready to rest for 45 minutes or until it doubles in size.
  8. I kept the bowl covered with a kitchen cloth in my oven (switched off)
  9. Once the dough had doubled in size, knead it for 1-2 minutes apply oil and let it rest for few minutes on the counter
  10. I doubled the recipe and made 4 loafs. Made coriander-garlic masala flavour with 2 and other 2 with peri peri n cheese
  11. Cut dough into equal parts. Roll into rectangles, spread grated cheese (I used processed Amul cheese) sprinkle peri peri powder and coriander leaves generously. And roll tightly into a log
  12. Grease your loaf tin generously with oil. Place your rolled logs into the tin. Cover with kitchen towel and leave for resting. Around 45 minutes to an hour. Preheat your oven at this point @190C for 10 minutes.
  13. Mix 1 tablespoon melted butter and 1 tablespoon milk. Use this as milk wash.
  14. Apply milk wash over the loaf.
  15. Sprinkle grated cheese and peri peri powder over the loaf
  16. Bake for 25-30 minutes.
  17. Run a knife around the edges of the tin and invert the bread. Leave it to cool completely
  18. Slice and enjoy spicy and cheesy bread for breakfast or lunch.
