ABOUT Hummus With Pita Bread RECIPE

A popular chickpea dip served with flatbread. A popular combination from the Middle Eastern cuisine. Must try !

Ingredients Serving: 4

  1. Hummus : 1 Cup Chickpeas, soaked overnight and boiled
  2. 4-5 Garlic cloves
  3. 1 tbs Lemon juice
  4. Salt to taste
  5. 2-3 tbs Chickpea Stock
  6. 1½ tbs Olive Oil + for drizzling
  7. 3-4 Black olives, pitted and cut into roundels
  8. Paprika for sprinkling
  9. Tahini : ½ cup White Sesame seeds
  10. 2-3 Garlic cloves
  11. Salt to taste
  12. ¼ cup Olive Oil
  13. Pita Bread : 2½ Cups Refined flour + for dusting
  14. 1½ tbs Fresh Yeast
  15. A Pinch Castor Sugar
  16. 1 tbs Salt
  17. 2 tbs Olive Oil

Instructions

  1. Method for Hummus : To prepare Tahini, grind sesame seeds to make a fine powder. Add garlic, salt, olive oil and 2-3 tablespoons water and grind to make a smooth paste. Transfer in a bowl.
  2. Coarsely blend chickpeas in a food processor.
  3. Add garlic, 2 tablespoons tahini, lemon juice, salt and chickpea stock and blend to make a smooth paste. Add olive oil and blend again.
  4. Transfer in a shallow serving plate, drizzle some olive oil, place black olive roundels on top and sprinkle some paprika on top.
  5. Method for Pita Bread : Take yeast in a bowl. Add castor sugar and 2-3 tablespoons warm water, mix and set aside for 5 minutes to activate.
  6. Take flour in another bowl. Make a cavity, add activated yeast and mix. Add salt and mix well. Add some water and knead into a soft dough.
  7. Transfer dough on the worktop, dust some flour and knead for 3-5 minutes. Add olive oil and knead again. Transfer in another bowl, cover with damp muslin cloth and set aside to prove for 10-15 minutes.
  8. Transfer dough on the worktop, dust some flour and knock back to release excess air and roll to make a thick sheet.
  9. Cut the sheet into roundels using a large cookie cutter and lightly roll into oval breads. Place them on a baking tray, cover with damp muslin cloth and set aside to prove for 10-15 minutes.
  10. Preheat oven to 180º C. Put the tray in the preheated oven and bake for 4-5 minutes. Remove from oven and cool.
  11. Serve the Pita Bread with Hummus.
