ABOUT Beer Battered Batata Vada RECIPE

Crispy beer battered potato fritters (batata vada) encased in a gram flour batter.

Ingredients Serving: 4

  1. For the filling:
  2. Potatoes: 6 (boiled & cut into pieces)
  3. Asafoetida: a Pinch
  4. Turmeric powder: 1/4 tsp
  5. Green chilli-garlic paste: 1 tbsp
  6. Coriander Leaves: 1/4 cup (chopped)
  7. Lemon juice: 1 tbsp
  8. Salt: to taste
  9. Pav buns- 8
  10. Oil: for deep fryimg
  11. For the batter:
  12. Coarse gram flour (besan): 1 1/4 cups
  13. Salt: to taste
  14. Red chill powder: 1/2 tsp
  15. Turmeric powder: 1/2tsp
  16. Baking Soda: 1 tsp
  17. Beer : As Needed

Instructions

  1. Heat one tbsp oil in a pan, Add asafoetida, turmeric powder, green chilli- garlic paste and mix. Add potatoes and salt and mix. Add coriander leaves, lemon juice and mix mashing the potatoes some more. Set aside to cool
  2. To make the batter place the gram flour in a bowl. Add salt, red chilli powder, turmeric powder, baking powder and mix. Add sufficient beer and whip to a smooth and thick batter. Set aside for at least 15 minutes.
  3. Divide the potato mixture into eight equal portions and shape them into balls.
  4. Heat sufficient oil in a big frying pan. Dip the potato balls in the batter and deep fry till golden brown on the outside. Drain on absorbent paper.
  5. Slit each pav, spread some coriander chutney, place a fritter (vada) and press lightly. Serve immediately.
