ABOUT Kanika RECIPE

This is a traditional odia sweet pulao recipe and also offer as a mahaprasad at lord Jagannath temple and you can prepare within a few minutes. I think no side dish can be required for this.

Ingredients Serving: 3

  1. Basmati rice-1 cup
  2. Desi ghee-1/2 cup
  3. Sugar-1/2 cup
  4. Salt-1/4 tsp
  5. Bay leaves-2
  6. Lawang-3-4
  7. Green cardamom-2
  8. Black cardamom-1
  9. Cinnamon-1 inch
  10. Turmeric powder-1/2 tsp
  11. Water-2cup
  12. Cashew nuts and raisins-1/4 cup

Instructions

  1. Heat a pressure cooker and put ghee in it and roast the cashew nuts and raisins in it and keep them aside.
  2. In that cooker put roast all the whole spices for 1 minute and then roast the rinse rice for 2 minutes.
  3. Then add water and the remaining ingredients and cook it till 1 whistle.
  4. Mix the roasted dry fruits and the Kanika is now ready to serve.
  5. Serve hot.
