ABOUT Khurma / Murali ( Bengali Churros ) RECIPE

It is a comfort food for not only me but for all the bengalis . This sweet and crispy Khurma is all time favourite to all the bengalis of all ages .

Ingredients Serving: 5

  1. 2 cups maida
  2. 2 table spoon oil ( for the dough)
  3. 1/4 tea spoon salt
  4. Water to knead the dough
  5. Oil to dip fry
  6. For sugar syrup
  7. 3/4 cup sugar
  8. 1 / 3 cup water

Instructions

  1. Mix salt and 2 table spoon oil to the maida and rub it to make the maida look like breadcrumbs
  2. Add little water to make a medium soft dough ( not soft like puri dough)
  3. Cover with a wet cloth and keep aside for 1/2 an hour
  4. Now make pedas out of the dough and roll it in 1/4 inch thick
  5. Try to roll it in a rectangle shape , otherwise you can cut the extra portion to give it a proper shape
  6. Now cut it length wise as shown in the above picture
  7. Now cut each position in a finger size
  8. Put oil in a kadai and start frying the Khurma in medium heat till it start browning
  9. Remove it in a paper napkin to absorb the extra oil and let it cool for some time
  10. Make the sugar syrup
  11. Put the sugar and water in a pan and boil it still it thickening
  12. When you will see the syrup is being crystallised at the edge of the pan put the gas flame in simmer
  13. Immediately put the fried khurmas in the syrup and stir constantly to coat all the khurmas into crystallised sugar syrup and switch off the gas
  14. The Khurma is ready now to serve
