ABOUT Quinoa Pulao RECIPE

Healthy food need not be bland in taste. With slight amount of imagination and improvisation health food can be served without compromising on taste. I tried this quinoa pulao for my gym freak son and now I make it on regular basis for the entire family as a complete meal.

Ingredients Serving: 2

  1. Quinoa- 1/2 cup
  2. Onion- 1 chopped
  3. Mixed vegetables ( beans,carrot,corn,peas, broccoli, green and red bell pepper)- 1 cup
  4. Green chilli- as per taste
  5. Oil-3 tbsp
  6. Salt- as per taste
  7. Black pepper-1/4 tsp
  8. Chopped coriander or parsley- 1 tbsp
  9. Water- 2 1/2 cups

Instructions

  1. Wash quinoa in enough water carefully. Boil the required amount of water. Add 1/4 tsp salt and quinoa to the boiling water. Cook on medium heat. Stir occasionally.
  2. After about 15 min the quinoa should be ready. Cook on very slow flame to absorb all water. Let it cool slightly.
  3. Take oil in a non stick pan. When the oil is moderately hot add the chopped onion. Add green chilies. Saute lightly.
  4. Add chopped veggies. Cover and cook on medium flame till done. The veggies should remain crunchy. Add salt and black pepper.
  5. Add chopped coriander or parsley. Serve warm.
