Ingredients Serving: 8

  1. Maida/Wheat Flour - 1/2 cup
  2. Rice Flour 2-3 tbsp
  3. Salt - 1/4 Teaspoon
  4. Water - adjust for batter consistency
  5. Turmeric powder 1 pinch
  6. Coconut oil - deep frying
  7. For Filling
  8. Green Gram Dal - Akha Moong - 1 cup
  9. Cardamom powder - 1/2 Teaspoon
  10. Grated Coconut - 3/4 cup
  11. Jaggery - 1/3- 3/4 cup, crushed - adjust

Instructions

  1. Pressure Cook green gram with enough water, drain excess water and set aside. Green gram dal should not be overcooked
  2. In a pan melt jaggery with 1/2 cup water; When it is melted completely, strain well to remove any impurities.
  3. Again boil the strained jaggery and add the grated coconut; Mix well and continue stirring.
  4. When the mixture starts thickening, add cooked green gram dal, cardamom powder and mix well.
  5. Mash the dal lightly with the back of ladle, do not crush them completely. Switch off and allow to cool completely
  6. Make small balls of the mixture and keep it aside. Incase you have trouble making balls, then grind half of the mixture and then add it to remaining, mix well and form balls
  7. In a bowl, add all-purpose flour, rice flour, turmeric powder, salt, enough water to form a smooth lump free batter. For healthier option use wheat flour instead of Maida
  8. Coat each ball well with the batter and deep fry them in oil over low-medium heat, till sugiyan turns golden brown
  9. Drain excess oil over tissue paper. Serve warm
