Ingredients Serving: 5

  1. chicken -1/2 kg
  2. Basmati rice – 2 cups
  3. 3 cups water
  4. Onion-2 large thinly sliced
  5. tomato-1
  6. Green chili – 4 slit lengthwise
  7. ginger Garlic Paste – 3 tblspn
  8. mint leaves- 1/2 cup
  9. coriander leaves-1/2 cup
  10. Red chilli powder – 2 tsp - adjust
  11. Biryani masala/Garam masala – 1 tbsp
  12. turmeric powder – 1 tsp
  13. coriander Powder – 1 tbsp
  14. cumin powder 1 tsp
  15. fennel Powder 1/4 Tsp
  16. Thick Unsour curd 1 cup
  17. Cashew-2 tbsp
  18. raisins - 2 tbsp
  19. ghee – 3 tbsp
  20. oil – 3 tblspn
  21. lemon juice 1 tbsp
  22. kewra Essence - 1-2 drops - optional
  23. For Whole spices
  24. Bay Leaf – 1
  25. cardamom – 5 crushed
  26. cumin Seeds – 1 tsp
  27. fennel seeds – 1 tsp
  28. cinnamon – 1 small stick
  29. 1 star anise
  30. cloves – 5
  31. peppercorns - 1/2 tsp - adjust

Instructions

  1. Wash and Soak the basmati rice for 30 min, drain excess water and set aside.
  2. In a pressure cooker heat oil and ghee, Fry cashews and raisins until golden brown. Drain them and keep it aside.
  3. Add all the whole spices and allow it to splutter
  4. Add in the onion, green chili and saute over a low heat until onions turn brown
  5. Add in ginger garlic paste and saute for a min.
  6. Add in tomatoes, spice powders, coriander leaves and mint leaves. Mix well.
  7. Add in curd and mix well. Add in the chicken pieces and saute for 10 mins till the chicken is well coated in the masala.
  8. Add in Basmati rice and combine well. Pour 3 cups of water and season with salt and mix well. Add Kewra essence
  9. Now bring this mixture to a boil and reduce the flame, cover the pressure cooker and cook for 1 whistle, simmer and cook for 15 mins. Switch off and let the steam release by itself.
  10. Once cooked, open the pressure cooker and fluff it with a fork. Add lemon juice and mix well
  11. Serve hot with raita
