ABOUT Idli Sambhar RECIPE

Idli is a traditional, breakfast and lunch item in South Indian households. Idli is savory cake from South India and is very popular throughout the country. Idlis are usually served in pairs with Sambhar and Coconut Chutney. Sambhar is a vegetable stew / soup made with tamarind and toor dal. Its a very Important and popular food of southern regions of India. It is also a traditional accompaniment in a complete south indian meal to steamed rice.

Ingredients Serving: 4

  1. For Idlis : 1 Cup White Lentil ( Urad Dal )
  2. 3 Cups Parboiled Rice
  3. Salt to taste
  4. 1/8 tsp Soda Bicarbonate
  5. Oil
  6. For Sambhar : 1 Cup split yellow Pigeon Peas ( Tur Daal )
  7. 1 Onion cut lengthwise
  8. 2 Tomatoes chopped
  9. 1 Cup Bottle Gourd ( Lauki ) chopped
  10. 1 Drumstick chopped into 3 inches pieces and slit
  11. Coriander Leaves
  12. 2 tbsp Oil
  13. 1 & 1/2 tbsp Tamarind juice
  14. 1 tsp White Lentil (Urad Dal)
  15. 2 tbsp Sambar Masala
  16. 1 tsp Mustard Seeds
  17. Few Curry Leaves
  18. Salt to taste
  19. 4 Red Round Chillies ( Boriya Chillies)
  20. 1 tsp Red Chilli Powder
  21. 1/2 tsp Turmeric Powder
  22. Jaggery ( Gur )

Instructions

  1. Method for Idlis : To make the batter, soak the urad dal and rice seperately, for atleast 6 - 7 hrs. Grind the urad dal using minimum water to form a smooth paste.
  2. Grind the rice to make a coarse paste. Mix the two ingredients and ferment it for 6 - 7 hours.
  3. In a pressure cooker add some water and leave it to boil for sometime. Add salt to the batter and mix well.
  4. Remove little batter in a different bowl, sufficient enough for 12 idli's approximately.
  5. Add soda bi-carbonate in the mixture and stir well.
  6. Grease the Idli stand with oil. Pour batter in the idlis trays. Put the stand in the pressure cooker.
  7. Close the lid of the pressure cooker without the vent valve. Steam it for 15mins on high flame.
  8. Let it cool down for few minutes and scoop out the idlis from the tray.
  9. Method for Sambhar : Soak the tur daal for 1/2hr, add 2 cups of water & pressure cook it.
  10. Add oil to the heated pan and add mustard leaves, boriya chillies.
  11. Once the mustard seeds starts sparkling, add white white lentils and cook till its golden brown.
  12. Add the curry leaves, onions and cook them well without making it brown.
  13. Add bottle gourd, drumsticks and saute it for few mins.
  14. Add tomatoes and salt and let it cook for few minutes by putting the lid on the pan.
  15. Meanwhile churn the tur daal to a smooth paste.
  16. Add sambhar masala, red chilli powder, turmeric powder to the vegetables and mix everything well.
  17. Add the churned daal, stir and mix everything well again.
  18. Add enough water, tamaring juice, coriander leaves, salt and a cube of jaggery and cook it for another 15 - 20mins in low flame and its ready to served.
  19. The Idlis are ready to be served with Sambhar and Coconut Chutney.
