ABOUT Buffalo Milk Rasmalai RECIPE

A very well known dessert to everyone, It actually does not need any introduction either. These yummy spongy milky white balls are made with buffalo milk by me and this is my first try at it. Earlier I have always made with cow's milk. These are much softer and just melts in mouth. Happy Dessert Time!

Ingredients Serving: 8

  1. Buffalo full fat fresh milk 2 litres
  2. Vinegar 2-3 tbsp
  3. FOR THE THICK RABRI : Sugar 1/2 cup
  4. Cardamom pods crushed 4
  5. Buffalo full fat fresh milk 1/2 litre
  6. Pistachio slivers 1/4 cup

Instructions

  1. Boil milk in a deep pan.
  2. As soon as it boils, add in the vinegar.
  3. Mix well and switch off the gas.
  4. Let it curdle well and then strain it in a cotton cloth making sure to rinse it off under running water to remove the traces of vinegar.
  5. Keep the cloth tightly closed with some weight over it to remove all the excess water.
  6. Boil milk for making rabri. Add crushed cardamom. Pods and sugar to it.
  7. Cook on low heat until partially thick.
  8. Knead the paneer well with your palm until smooth and elastic.
  9. Make small balls of equal size.
  10. Drop them in the rabri and cover.
  11. Allow them to rise in size for 10 minutes.
  12. Refrigerate until chilled and garnish with pistachio slivers before serving.
  13. Enjoy!
