ABOUT Fudgy Date Brownie RECIPE

Dates, are healthy for all, especially growing kids. They are versatile fruits and can easily substitute sugar in any of your favourite desserts

Ingredients Serving: 10

  1. 1 1/2 cups pitted dates
  2. 1 cup hot water
  3. 3/4 cup unsalted butter softened
  4. 2 cold / refrigerated eggs
  5. 1 teaspoon vanilla extract
  6. 3/4 cup cocoa powder
  7. 1/2 cup+2 tablespoons All purpose flour
  8. For sprinkling some salt
  9. For the glaze:(optional)
  10. 3 tablespoons cocoa powder
  11. 3 tablespoons honey or other natural syrup-type sweetener
  12. 1 tablespoon melted butter or coconut oil
  13. 1/4 teaspoon vanilla extract

Instructions

  1. Grease or line an 8x8 baking pan. Preheat oven to 350 Fahrenheit
  2. In a food processor or blender, puree the dates and hot water until smooth.
  3. Measure out a cup of the paste and transfer to a large bowl with the butter.
  4. Cream the butter and date paste until smooth
  5. Add the eggs, one at a time and vanilla extract, mixing until fluffy and smooth.
  6. Add the cocoa and flour, and mix on low until well combined.
  7. Spread batter into prepared pan, smoothing with the back of a spoon. Sprinkle a little salt on top.
  8. Bake for 18-20 minutes, or until edges are set.
  9. Allow pan to cool while you prepare the glaze
  10. For the glaze:Whisk together the butter, honey and cocoa powder.
  11. Add vanilla and whisk until smooth
  12. If the glaze seems a little runny- add a dash more of cocoa powder
  13. If it seems too thick- you can add a splash of milk
  14. Drizzle over the brownies and sprinkle with more salt.
  15. Brownies will last for up to a week in a sealed container in the fridge.
