ABOUT Parle Style Coconut Cookies With Oatmeal RECIPE

Parle biscuits are loved by one and all. I have tried to come up with the same taste with this unique coconut cookie recipe. Do not believe my words? Try it yourself to bake some of the healthiest, crunchiest coconut cookies made with whole wheat flour and oatmeal. Can it get any healthier than this?

Ingredients Serving: 10

  1. 1 cup- whole wheat flour
  2. 1 cup- dessicated coconut powder
  3. 1/2 cup- oats powder (ground rolled oats)
  4. 2 tbsp- cold butter or desi ghee (clarified butter)
  5. 2 tbsp- Honey
  6. 2 tbsp- cold milk or water
  7. 1 tbsp- sugar powder (you may add more)
  8. 1/4 tsp- baking soda
  9. 3/4 tsp- baking powder

Instructions

  1. Mix whole wheat flour, oats powder, coconut powder, baking powder, and baking soda. Add sugar powder.
  2. Grate cold butter and rub into the flour. Add honey. Mix everything with hands. It will be like a crumbly mixture.
  3. Add milk. For a vegan version, you may skip milk altogether and add water instead.
  4. Collect all the ingredients. Do not knead. If the dough's consistency is soft, it is done. You may need to add 1 tbsp of milk to get the right dough consistency. If the dough still feels dry, add 1 tbsp of milk. I added.
  5. Add milk only if the dough feels hard and dry. It should be soft yet not sticky.
  6. Make a dough log. I made two logs with the required amount.
  7. Cover in a parchment paper or aluminum foil and refrigerate for 3-4 hours. Refrigeration will help harden the dough.
  8. Preheat oven (microwave convection) for 10 minutes at 180 degrees. Take out the cookie dough from the fridge and roll out into a chapati. It will be hard initially. So try to press it with hands first, so it softens little.
  9. Cut into desired shapes and carve out any patterns you like. Place on a greased baking tray at least 4 inches apart to ensure even baking from all sides.
  10. Bake for 20 minutes at 170 degree centigrade. Let the cookies sit in the oven for some time after baking. Take out and cool on a cooling rack.
