ABOUT Vegetable Cup Cakes RECIPE

Sometimes we wonder what to give to children as snacks or between the meals to munch on. Here I have come up with a healthy recipe of vegetable cup cake. I do not claim it to be 100% healthy as it contains flour, but, at least it is better than chips and biscuits.Long ago i found this type of a recipe on social media and improvised it in my kitchen to suit the taste buds of my kids.

Ingredients Serving: 8

  1. 1.. All purpose flour.... 2 cups
  2. 2. Vegetables ( chopped onion+ grated carrot+chopped sweet corns+chopped capsicum)...1/2 cup
  3. 3. Ginger (chopped)... 1 tsp.
  4. 4. Green chill.... according to taste
  5. 5. Dried Oregano or pizza seasoning...1 tsp
  6. 6. Salt... 1/2 tsp.
  7. 7. Oil....1/4 cup
  8. 8. Milk....1 and 1/2 cups (approx)
  9. 9. Shredded cheese (optional)...1/4 cup
  10. 10. Sugar... 2 tsp.
  11. 11. Baking powder...1 tsp
  12. 12. Baking soda.....1/2 tsp
  13. 13. Milk Powder.....2 tbsp

Instructions

  1. 1. Sieve together flour + salt + baking powder and baking soda.
  2. 2.Add milk to flour. Blend carefully. Add oil little at a time. Add sugar.
  3. 3. Add vegetables and ginger and chilies.
  4. 4.Add cheese.
  5. 5.Add seasoning.
  6. 6.Add extra milk if the batter is too thick.
  7. 7. Line and grease cup cake moulds.
  8. 8. Bake in a pre heated oven(180 degree) for attest 20 minutes or till done as baking time may vary from oven to oven.
