Ingredients Serving: 4

  1. Whole milk – 2 cups or 500 ml
  2. Heavy cream – 3 tbsp or 40 ml
  3. Finely chopped dark chocolate – 50 gm
  4. Nutella or similar – 2 tbsp
  5. Cocoa powder – 2 tbsp (15 gm)
  6. Corn starch – 2 tbsp (20 gm)
  7. Rice flour – 1 tbsp (10 gm)
  8. Vanilla extract – 1/2 tsp
  9. Sugar – 1/2 cup (about 100 gm)
  10. Toasted & Crushed hazelnuts – 1 tsp (optional)

Instructions

  1. Combine the dry ingredients in a medium saucepan and mix well.
  2. Gently add the milk, whisking until combined, and place over medium heat.
  3. Cook slowly, stirring constantly until the pudding starts to bubble and thicken.
  4. Add the nutella, chopped chocolate and cream and cook until chocolate has melted.
  5. Turn off heat, add the vanilla, give it a thorough mix and pour into individual dessert cups/glasses.
  6. Let it cool to room temperature and then refrigerate until serving time
