In a blender , take 3 cups cleaned palak leaves.
Add 1/4 cup mint leaves .
Add 1 tablespoon sliced ginger .
Add 12 garlic pods.
Add required water and grind to a smooth green purée .
Green purée is ready . Set aside . I
Take 3 bay leaves,2 cinnamon sticks,4 green cardamom, mace 1/2 teaspoon, cloves 9, staranise 2,
Kapok dried buds 2 . Heat 1/4 cup cooking oil in a wide pot.
Add 1 tablespoon ghee .
Add in the whole spices . Toss them for 30 seconds in medium heat .
Add thinly sliced 2 big sized onions . Sauté the onions.
Add a teaspoon black whole pepper .
Add half of the salt at this stage.
Sauté until onions turn light brown.
Add the ground green purée .
Add 700grams chicken pieces. Smear chicken until discoloration.
Cover and par cook chicken .
Add 1 teaspoon turmeric powder after chicken is partially cooked .
Add 1.5 teaspoon coriander powder.
Add 1 tablespoon red chilli powder.
Add 1/2 teaspoon garam masala powder.
Mix and cook chicken Greek gravy until oil floats on top .
Add 1 medium sized tomato finely chopped .
Add the remaining salt .
Mix . Add 3.5 cups water . Measure water according to the basmati rice you are using .
Boil the liquid. Add 20 minutes soaked and drained 4 cups Basmati rice .
Mix gently . Cover the pot and cook in low for 20 minutes .
After 20 minutes , fluff the rice gently .
One pot Palak Chicken Rice is ready .
