ABOUT Apple and Peach cobbler RECIPE

this dessert, apart from being extremely simple to put together, is very decadent and delicious. The flavours of the peaches and apples along with the biscuit crust compliment each other very well.

Ingredients Serving: 4

  1. Canned peaches- 2, 8oz can
  2. Apples-2, peeled, cored and chopped into bite sized pieces
  3. Sugar- 3tbsp
  4. Cinnamon powder- 1/4tsp
  5. Plain flour- 2tbsp
  6. Juice of 1/4 lime
  7. For the topping:
  8. Plain flour- 1 cup
  9. Baking Powder- 1tsp
  10. Salt- 1/4tspn
  11. Vanilla- 1/2tsp
  12. Butter- 4tbsp
  13. Cream- 3tbsp
  14. Condensed milk- 3tbsp
  15. Vanilla ice cream to serve

Instructions

  1. For the fruit stuffing:
  2. Drain the syrup from one can and set aside. Discard the syrup from the other.
  3. In a sauce panMix the chopped apples, canned peaches, sugar, lime juice and the reserved syrup.
  4. Mix the cinnamon powder and the flour into the fruit mixture, toss and set it aside.
  5. For the topping:
  6. Combine all the dry ingredients and the butter and pulse in a blender for 6-7 times
  7. Add the condensed milk, vanilla and the cream and pulse again for 5-6 times
  8. To assemble the cobbler
  9. Scoop out a tbsp of the topping mixture and plop them on the fruit mixture. The dough should be patchy and should not cover the entire surface
  10. Bake in a preheated oven at 220C for 20 to 25 mins till the syrup bubbles on top and the topping is browned.
  11. Serve warm or cold with Vanilla Ice cream.
