ABOUT Doodhi ka Halwa RECIPE

This recipe is my own creation and it is my childrens' favourite dessert.

Ingredients Serving: 7

  1. Doodhi (Bottle gourd) 1 kg
  2. 3 whole cardamom
  3. sugar 1 cup
  4. 3 cups fresh milk
  5. 1 1/2 or 2 cups mawa/khoya
  6. fresh cream 1/2 cup
  7. green color 2-3 drops
  8. ghee 1/4 cup
  9. kewra essence 2 drops
  10. chopped almonds and pistachios 2 tbsp and 1 tbsp grated mawa for garnishing
  11. few strands of saffron for garnishing

Instructions

  1. Grate doodhi (bottle gourd) 1 kg exactly, peel and grate without seeds.
  2. Wipe the grated bottle gourd in a clean and dry towel.
  3. In a pan, add 3 whole cardamom (open slightly the cardamom), add in sugar 1 cup (you can add more as per your preference).
  4. Cover the pan and cook on a medium flame. Cook until sugar and bottle gourd have mixed well.
  5. Add in 3 cups fresh milk. Cook in an open pan, do not cover the pan with lid and stir continuously.
  6. Cook until you see about 1 cup milk is left, add in grated 1 1/2 or 2 cups grated mawa.
  7. Add fresh cream 1/2 cup and green color 2-3 drops.
  8. Stir on a low flame, for 5-7 minutes until the remaining milk has evaporated. Add ghee 1/4 cup and mix well.
  9. Ensure the mixture is mixed well, once you turn off the flame, add in kewra essence about 2 drops and mix well.
  10. Add chopped almonds and pistachios 2 tbsp, grated mawa 1 tbsp and a few strands of saffron.
