ABOUT Nolen Gur Payesh RECIPE

My visit to 6 Ballygunge Place in Kolkata 2.5 years ago got me first acquainted to Nolen Gur and I've always loved using it in my desserts.

Ingredients Serving: 6

  1. 1/2 cup rice
  2. 1 tbsp ghee
  3. 1.5 litres Milk
  4. 1 cup condensed milk
  5. 1/2 cup Nolen Gur
  6. Chopped Pistachios and Rose Petals, for garnishing

Instructions

  1. Boil the milk in a large container on medium heat and stir continuously.
  2. Wash the rice and soak it in water for 10 minutes. Drain out.
  3. In a pan, heat ghee and fry the rice for a couple of minutes.
  4. Once the milk has slightly thickened up, add the rice to it and on low heat, cook further for 20 minutes. Stir every 3-5 minutes throughout this step so the bottom does not burn.
  5. Add condensed milk to it and bring it to a boil.
  6. Add nolen gur to the milk and again boil for 3 minutes, stirring throughout.
  7. Serve it in bowls of choice and garnish with pistachio slivers and rose petals.
