Caramelized Fruity Vanilla Pancake

ABOUT Caramelized Fruity Vanilla Pancake RECIPE

This is one my favourite yummy pancake recipe. The great vanilla flavour makes so delicious and also makes so light and fluffy. On the other side the caramelize fruits makes this so surprisingly tasty.

Ingredients Serving: 4

  1. All purpose flour - 1 1/2 cup
  2. Granulated Sugar - 2 tablespoon
  3. Baking powder - 1 1/2 teaspoon
  4. salt - 1/4 teaspoon
  5. Large egg - 1
  6. Low fat or skin milk - 3/4 cup
  7. Vanilla Yoghurt - 1/2 cup
  8. Vanilla extract - 1/2 teaspoon
  9. Butter - 1/4 cup
  10. Brown sugar - 1/2 cup
  11. Banana - 2
  12. Chopped pecan - 1/4 cups
  13. Grated coconut - 1/2 cup
  14. Black grapes - 10 - 12
  15. Small gulab jamun (optional) - 10 pieces

Instructions

  1. In a large bowl whisk together flour, sugar, baking powder,baking soda and salt.
  2. Make a well in the dry ingredients and add the wet into the dry mix until just combined.
  3. Heat a large skillet over medium low heat. Grease skillet with butter or non stick cooking sprays.
  4. Add 1/4 cup batter per pan cake
  5. Cook until bubbles form and the edges start to look dry about 2 minutes.
  6. Flip pancake over and cook for 1/2 minutes or until the other side is lightly browned.
  7. Meanwhile make the caramelized bananas.
  8. Melt the butter in a separate skillet over medium low heat.
  9. Add the butter and let it melt.
  10. Once the most of the butter has melted stir in the sugar, continue stirring until the sugar melts.
  11. Add the banana slices, grated coconut and sliced grapes to cook and caramelize about 2- 3 minutes.
  12. Pour the banana sauce over the hot pancakes.
  13. Garnish with small gulab jamun and grated coconut and grapes.
  14. Serve and enjoy.
