ABOUT Blueberry Shrikhand... RECIPE

A popular dessert with a tangy fruity twist to it by me. All that is needed to whip up this gorgeous looking one is full fat yoghurt and few blueberries. Protien and Vitamin loaded, this is sure to tickle your tastebuds making you go ga ga over this fruity, nutty and protien rich food served chilled for that awesome experience. Any other choice of dry fruits can also be used. Happy Chilling!

Ingredients Serving: 7

  1. 500 gm Full fat yoghurt
  2. 1 1/2 cup blueberries
  3. 3/4 cup sugar
  4. 1/4 cup slivered Pistachios

Instructions

  1. Tie up the yoghurt in a clean cotton cloth or a cheesecloth placed in a strainer kept with a bowl underneath it to collect the whey.
  2. Refrigerate it for atleast 8-12 hours or more depending upon the climate factor at your place of residence.
  3. Refrigeration is important here as the climate varies in many places and therefore it is necessary to avoid the Hung Curd from becoming too sour or bitter.
  4. Blend blueberries and sugar to a smooth puree.
  5. Add this puree to the hung curd and mix well.
  6. Serve it chilled with pistachio slivers.
