Chickpea-Spinach Croquettes

ABOUT Chickpea-Spinach Croquettes RECIPE

A healthy, vegan, quick snack; suitable for kids, those with diabetics and can be a delectable party appetiser too!

Ingredients Serving: 8

  1. 250 grams cooked chickpeas
  2. 200 grams spinach leaves
  3. to taste Salt
  4. 2 tablespoon heaped gram flour/besan or 50 grams bread crumbs
  5. 3 garlic pods chopped
  6. 5-6 black pepper corns
  7. 5-6 coriander seeds(optional)
  8. 1 teaspoon (or more) paprika
  9. Some oil to shallow fry/ oil to deep fry and some to blend
  10. for Yogurt-tahini dip:
  11. 200 grams yogurt
  12. 2 tablespoon heaped tahini paste
  13. salt to taste
  14. juice of 1/2 a lemon
  15. a sprinkle of paprika
  16. 1-2 coriander springs to garnish with

Instructions

  1. Blanch the Spinach leaves using some water for 5 minutes
  2. Discard the water next and chop the leaves roughly
  3. Add the spinach in a blender, followed by the chickpeas
  4. Add salt, paprika, garlic, coriander seeds and pepper corns
  5. Use some oil and blend until smooth
  6. Transfer the mix in a bowl and add the gram flour/ bread crumbs
  7. Mix well and refrigerate 10 minutes covered
  8. Heat oil in a pan
  9. Prepare croquettes/tikkis of the mixture
  10. Shallow fry them in batches
  11. Flip and fry until brown and crisp on both sides
  12. Place the fried croquettes on an absorbent paper for sometime before serving
  13. for yogurt-tahini dip:
  14. mix all the ingredients except coriander well in a bowl
  15. chill for 30 minutes before serving
  16. serve garnished with coriander springs along with hot croquettes
  17. enjoy!
