About Carrot and nuts cake Recipe

This is a supersoft and moist cake made using carrots and nuts.Perfect accompaniment for kid's breakfast alongwith milk.

Ingredients to make Carrot and nuts cake

  • wheat flour 3/4 cup
  • all purpose flour 1/4 cup
  • carrots 1 cup(grated)
  • baking soda 1/2 tsp
  • Baking powder 1 tsp
  • salt 1/4 tsp
  • sugar 1/2 cup
  • curd 1/2 cup
  • olive oil 1/4 cup
  • Milk 2 tbsp
  • Vanilla essence 1/2 tsp
  • Chopped dryfruits (cashew,walnuts,pista and almonds)

How to make Carrot and nuts cake

  1. Take curd in a bowl.
  2. Add sugar and olive oil to this.
  3. Add 2 spoons milk and whisk till sugar melts.Then add vanilla essence.
  4. Now add grated carrots.
  5. Sieve flour,salt,baking powder and soda to this.
  6. Mix by cut and fold method.
  7. Add some chopped det fruits.
  8. Now pour this batter in a greased loaf tin.Sprinkle some det fruits on top.
  9. Keep to bake at 180℃ in a preheated oven for 30 minutes.
  10. Check with a toothpick after 30 minutes.Our cake is done.
  11. Let it cool and then de mould it.
  12. Cut into pieces and serve with milk.
