In Greece watermelon is included in almost all courses when it is in peak season, particularly in desserts. Fried watermelon is one such dessert which can be commonly found in Greece. They garnish fried watermelon in various ways and this recipe is one of them. Watermelon pan fried in olive oil and garnished with yogurt and honey caramelized walnuts gives this refreshing dish.

Ingredients Serving: 1

  1. To caramelise the walnuts
  2. Walnuts – ½ cup
  3. Butter – 2 tsp
  4. Honey – 2 tsp
  5. For dessert base preparation
  6. WaterMelon – 1 cut piece (4 cm thick triangle or square)
  7. Olive Oil –1 tsp
  8. Icing sugar – to dust (Optional)
  9. Yogurt – 100 gms or as needed

Instructions

  1. Take a non-stick pan, add butter. Once butter is melted add honey. Mix them well.
  2. Add walnuts and stir until they are coated well. Once its coated, continue to cook for 1 minute so that they turn into golden brown.
  3. Take a baking tray or any cooking tray and line it with a baking paper.
  4. Add the honey cooked walnuts into this.
  5. Let this cool off and gets into a state where you can break them into pieces. It took me around 30 minutes for this process.
  6. Caramelized walnuts in honey is ready .You can store them in an airtight container and use them just before serving the dessert or for future.
  7. For the actual dessert, cut the watermelon and remove the rind. The size of the cut piece must be 4 cm thick triangle or square shape.
  8. Dust the watermelon with icing sugar. This step is optional if your watermelon is too sweet.
  9. Just before serving, take a pan and add 1 tsp olive oil and place the water melon.
  10. Make sure to fry it in all the sides by flipping it. Place the watermelon in the plate and add yogurt.
  11. Garnish generously with caramelized walnuts and serve them immediately. Repeat this for the remaining pieces.

This is an amazing dessert. I can't even begin to imagine the amount of flavour it will be having. Truly mouthwatering!
