Ingredients Serving: 10

  1. For gulabjamub Whole dried milk / mawa - 2 cup
  2. Cottage cheese / paneer - 1 cup
  3. All purpose flour / maida - 2 tbsp
  4. Milk - 4 tbsp
  5. Clarified butter / ghee - 1 tbsp
  6. Sugar - 1 cup
  7. Water - 1 and 1/2 cup
  8. Cardamom powder - 1/4 tsp
  9. Baking powder - a pinch
  10. Oil - for frying
  11. For rabri Milk - 1.5 cup
  12. Mawa /whole dried milk - 250 gms
  13. Sugar - 2 - 3 tbsp
  14. Saffron - few strand
  15. Roughly chopped pistachio - 1 tbsp

Instructions

  1. For gulabjamun Grate the mawa /whole dried milk and cottage cheese / paneer and mix well.
  2. We mash the cottage cheese / paneer and mawa /whole dried milk very well and make a soft and smooth dough.
  3. Add all purpose flour / maida,baking powder,milk and clarified butter/ghee and mix well.
  4. Divide the dough in equal size balls.
  5. Roll each balls between your palms.
  6. All the balls are made in the same way.
  7. Heat enough oil in a pan for deep frying.
  8. Fry the gulab jamun on low heat till golden brown.
  9. Drain in paper napkin.
  10. Again heat the pan.
  11. Add sugar and water till sugar dissloved
  12. Keep it medium flame for 8 - 10 mins.
  13. When it gets stick it means syrup is ready add cardamom powder.
  14. Place the gulab jamun in the sugar syrup.
  15. For rabri Heat milk in a heavy bottom vessel.
  16. When it boils keep in a low flame.
  17. Add mawa/whole dried milk,saffron and sugar and mix well
  18. And when it gets thick we switch off the gas.
  19. Pour the hot rabri in the bowl and squeeze the gulabjamun and place in the rabri bowl .
  20. Garnish with pistachio.
  21. Serve after an hour
