This recipe gives poha/ avil uppma a spicy and eggy twist.

Ingredients Serving: 1

  1. Poha/avil/flattened rice- 1 cup
  2. Egg- 1
  3. Onion- 1 finely chopped
  4. Green chilli - 2 nos, finely chopped
  5. Ginger - 1 coin size, finely chopped
  6. Lemon - 1/2
  7. Groundnut - 1 tablespoon
  8. Mustard seeds - for seasoning
  9. Oil - for seasoning
  10. Curry leaves - 1 bunch
  11. Salt as per taste
  12. Turmeric - 1/4th tsp
  13. Garam masala/ Chat masala - 1/4th tsp

Instructions

  1. Rinse the poha/ avil/ flattened rice with water and allow it to rise for 10 mins.
  2. Heat a kadai. Add a tablespoon of cooking oil (I used coconut oil for extra flavour) and allow it to heat up. Then add in mustard seeds and allow it to crackle, next add the curry leaves.
  3. Now add the groundnut and fry for a few seconds. Next add the finely chopped chilli, ginger and fry for few minutes till the raw smell goes away.
  4. Put in the finely chopped onion and fry till it turns golden brown in colour. Add turmeric and garam masala and fry it for a few seconds.
  5. Break the egg, whisk it well and pour it in the kadai. Fry it till the egg scrambles.
  6. Now add the poha and mix it well in a low flame. Finally add lemon juice of half lemon and salt as per taste, then turn off the flame.
  7. Close it with a tight lid and leave it for 5 mins. Serve it hot.
