ABOUT Litti Chokha RECIPE

Litti Chokha is rustic and traditional Bihari recipe made with whole wheat, stuffed with sattu flour and served along with eggplant, potato, tomato. This main course recipe has an authentic flavour of Indian spices. Litti means small dough ball which is traditional cook on direct fire during winter season. Litti has a hearty filling of sattu along with spices like ajwain and kalonji. Chokha means mash relish which is served along with litti.

Ingredients Serving: 6

  1. For Chokha 150 gm Bartha brinjal 10gm chopped garlic 1/2 teaspoon lemon juice 50gm tomato 20 chopped onion 5gm green chilli 1 sprig chopped coriander leaves
  2. For Filling 100gm black gram flour ( sattu) 1 teaspoon salt 2gm nigella seeds (kalongi) 5gm grated ginger 2gm green chilli 1 teaspoon mustard oil 1 teaspoon lemon juice 2gm thymol seeds (Ajwain) 1/2 handful chopped coriander leaves 10gm pickle masala
  3. For Dough 150gm whole wheat flour 1 pinch salt 1 tablespoon mustard oil water as required 100gm Ghee

Instructions

  1. For Litti 1. To prepare dough, mix whole wheat flour, salt, mustard oil and water. Knead dough till medium soft. Rest dough for 15 mins cover with damp cloth to avoid dough trying dry.
  2. 2. For filling mix sattu flour, salt, kalongi, ginger, green chilli, mustard oil, ajwain, pickle masala, chopped coriander leaves. Add little water to bind all ingredients together.
  3. 3. Divide dough into small round ball. Roll into puri size.
  4. 4. Put spoonful of filling in to puri, cover and give small peda shape.
  5. 5. Apply ghee to litti from all the side. Pre heat tawa, arrange litti on tawa. Bake litti till it turns brown in colour and becomes hard.
  6. For Chokha 1. Roast bartha baigan on flame till pulp is soft. Peel of skin and mash baigan.
  7. 2. Roast tomato on flame till it is soft. Peel of skin and mash tomato.
  8. 3. Mix mash baigan, tomato, chop garlic, green chillies, onion, lemon juice and coriander leaves. Add salt and mix well.
