This Malai or fresh cream muffin is an amazing recipe for anyone with sweet cravings. This was preserved in my diary since my childhood, I probably inherited this traditional method of baking from my mother. I tried baking this after a long time, on the evening of Janamashtmi and believe me it's so soft, spongy and tasty that no one can stop at one. I gobbled up two instantly after offering it to my Kanha (God)!

Malai Muffins

Ingredients to make Malai Muffins

  • maida 1/2 cup
  • Grounded sugar 1/2 cup
  • malai or amul fresh cream 1/2 cup
  • Powder milk 50 gms
  • Baking powder 1/2 tsp
  • baking soda 1/4th tsp
  • water or Milk 1/4th cup
  • Butterscotch essence 1 tsp
  • Grated chocolate or Tutti fruity 1 tbsp (optional)
  • Muffin liners

How to make Malai Muffins

  1. Let the oven preheat at 180 degrees celsius.
  2. Strain together the maida, baking powder, baking soda and milk powder.
  3. In a separate container, beat together the malai and sugar.
  4. Slowly add the maida mixture in batches into the malai-sugar mixture. Now add milk/water and butterscotch essence into this mixture.
  5. Lastly add the tutti-fruity cubes or choco chips as per your choice and pour the batter on top with the help of an ice-cream scoop into individual cupcake/muffin liners. ( I sprinkled grated chocolate over the batter.)
  6. Bake it in the preheated oven for 15 minutes at 180 degrees.

My Tip:

Use butterscotch essence instead of vanilla essence as it gives a rich feel and aroma.
